Homemade Strawberry Cake

Strawberries are very special fruits. It is said that they are a symbol of Love and Romance 😍. Well, I couldn’t agree more because they actually look like little Red Hearts 🍓! The first thing that attracts you to them is their vibrant red color; their sweet smell is the other thing. But personally, what I love most about strawberries is their taste, which is fruity sweet and acidic sour. My taste buds always get tantalized by strawberries. Now imagine baking the strawberry cake with all the love from your heart and sharing it with your loved ones!

I have 2 favorite ways I use to make sure I bring out the strawberry flavor in my cake. In this strawberry cake recipe, I used strawberry essence and strawberry yoghurt. The other way is pureeing strawberries and folding it into cake batter. This I will show you in my upcoming recipe blogs. So keep it locked 😁! This cake smells so nice and tastes even better! It’s extremely moist, full of flavor and very easy to bake.

Strawberry Cake Ingredients

2 cups of self-rising flour

¾ cup of butter

¾ cup of sugar

¼ teaspoon salt

2 teaspoons baking powder

2 eggs

½ cup strawberry yoghurt

¼ cup milk

3 tablespoons Strawberry essence

Strawberry Butter Cream Frosting

1 cup icing sugar

1 cup butter

½ cup Strawberry fruit puree

Let’s Bake!

Step 1:

In a bowl, cream in together butter, sugar and salt until fluffy and smooth.

Step 2:

Add in the eggs to the mixture and afterwards the strawberry essence.

Step 3:

To the mixing bowl add in flour and baking powder and mix everything up well.

Step 4:

Here is my favorite part, adding strawberry yoghurt to the batter! The yoghurt traps in moisture to the cake and add more strawberry flavor. Mix in the yogurt then finally add in the milk.

 

Step 5:

The next step is now baking it! Bake the cake in a baking tin prepared by smearing butter all over it and dusting it with some flour so that the cake comes out easily without sticking on the baking tin. You can also use a baking sheet. Pre-heat the oven to 170 degrees Celsius for 10 minutes then bake cake for 1 hour.

To check whether the cake is ready, insert a toothpick or a knife into the center of the cake and when it comes out clean, your cake should be ready. Remove the cake from the baking tin and allow it to cool completely.

Step 6 – Optional:

Make the frosting by mixing together the icing sugar, butter and the strawberry fruit puree.

Once the cake cools completely, frost your cake with the butter cream and decorate as you desire. I used raspberries to top my cake, after I realized I had used all the strawberries to prepare the puree aaaaand ate some too 🙈!

Refrigerate the cake for 30-40 minutes before slicing. This helps the cake to stay firm in shape to avoid falling apart. And anyway, a chilled cake always tastes the best!
